We're unsure about our finances when we get to Sydney and my wife is quite keen on the idea of returning to teaching assistant work. Do you know if there's much demand for teaching assistants in Sydney and what sort of salary she should expect?

There are not as many teaching assistants in Australia than in the UK and I don't think that they are paid that well. I would try seek.com.au as a start and see if there were any positions advertised.

You could try contacting the NSW department of education and teaching. They have a website page explaining employment opportunities which included teaching assistants.
The NSW Department of Education and Training delivers high quality education and training services from early childhood education through to post-compulsory education and training.
In 2007, the NSW Department of Education and Training provided education and training services to over 1,371,000 students through an extensive network of government schools, TAFE NSW Institutes, the National Art School (NAS) and the Adult Migrant English Service (AMES).
Public school teachers are qualified to teach pre-school to Year 2, Kindergarten to Year 6 or specific subject areas across Years 7 to 12.
TAFE teachers are experts in their chosen fields, with extensive industry experience and the latest training techniques and resources.
The department also employs teachers in a range of professional support roles to assist teachers in schools, TAFE's and colleges to implement the curriculum. Significant work opportunities also exist for school assistants and other support staff in schools and administrative offices across the state
