The average full time salary in Australia is $63986. Earning at or above this level, I would consider a good wage for one person to live on. Unless you have a good deposit amount, this wage will probably not be enough to afford a house, but you will be able to rent easily.
Like all countries there are cheap areas and expensive areas and so it is difficult to comment without knowing where you want to live.

The questions I'd be asking are:
1. What salary will I actually be able to get in Australia. Has someone made an offer to you at around $56K or are you just assuming you'll be able to get this wage?
2. If you go from £28K to $56K you'll be going from an above average wage in the UK to a below average wage in Australia. Do you think this is appropriate for your skills and potential employer demand for your skills?
3. If you're moving from London to Adelaide (high cost location ------> low cost location) you'll be better off. If you're moving from a low cost location in the UK to a higher cost location, like Eastern Sydney, you won't feel quite so flush.

As far as I'm concerned anything over $50,000 is a good salary but you will need a lot more if you want to live in the expensive areas of the cities.
